Healthy Vegan Oreos
These Healthy Vegan Oreos are the perfect treat on a hot summer day, and the filling can be made in advance for easy, spur-of-the-moment assembly. It’s a great recipe to have on hand for any last-minute guests or happy hours you might be throwing this summer, and kids will love helping to fill the Oreos before eating!

For the Vegan Oreo cookie:
For Vegan Oreo filling:
- 4 oz vegan cream cheese
- 1/2 c. coconut cream (scooped from the top of a can of full-fat coconut milk)
- Maple syrup to taste
- 1 t. vanilla extract
1. To make the vegan oreo cream filling, blend all the ingredients in a food processor or blender until smooth. If the mixture is too runny, place in the freezer for 10-15 minutes to firm.
2. To assemble, place 2-3 T. of the oreo filling on one side of the Mocha Chip or Chocolate Chia CompletEats cookie. Top with another cookie, and set aside. Finish filling the remaining cookies, and serve immediately or store in the refrigerator. Vegan Oreos can be stored in the refrigerator for 2-3 days, but it’s best to assemble them right before consuming. The vegan oreo cookie filling can be stored, unassembled, in the refrigerator for up to one week.
